Avocado Tuna Salad
Yield: 2 servings
1 can of tuna, drained
1 medium-sized ripe avocado
1 celery stalk, chopped
1 small apple, chopped
1 Tbsp lemon juice
½ tsp sea salt
Optional: chopped raw red onion or shallot to top tuna salad
Place the tuna into a medium-sized bowl. Add the avocado and mash well with a fork to combine. Add the rest of the ingredients and stir. Top with onion or shallot, if desired.
Serve with crackers.
